No matter the season, this tofu scramble is a delicious and satiating breakfast to switch up from your regular smoothie.
I like to add vibrant flavors to this savory dish such as garlic, jalapeño, dill and onion. Tofu absorbs flavors really well, so you don’t have to worry about having a bland dish.
I start by sautéing onion with olive oil until it becomes fragrant, then I add chopped bell pepper, olives and garlic and sauté for a few minutes.
Once your veggies are soft, crumble the tofu over the pan with your hands, sprinkle the turmeric, salt and pepper, and sauté until the tofu is cooked through.
While the tofu is cooking, chop up some jalapeño, cherry tomatoes and fresh dill. These will be the fresh components that will add vibrant flavor to the warm savory scramble.
Ingredients: (serves two)
1/2 block tofu
1/2 yellow onion
1/2 red bell pepper/ capsicum
1/4 cup olives, chopped
2 cloves garlic
sprinkle of turmeric
salt and pepper to taste
fresh jalapeño slices
Start by chopping the onion, bell pepper, olives, garlic, tomatoes, jalapeño and dill.
Heat a non-stick pan and sauté the onion and bell pepper for about 4 mins. Add the olives and garlic and sauté for another 2-3 mins. Crumble the tofu over the pan with your hands, add the turmeric, salt, pepper and saute the turmeric through all of the tofu and until the tofu liquid is cooked through. Turn off the heat, add to a plate and top with fresh jalapeño and dill. Add the cherry tomatoes on the side for a fresh component. Top with salsa, cashew cheese, hot sauce or tomato sauce!
