No matter the season, this tofu scramble is a delicious and satiating breakfast to switch up from your regular smoothie.
I like to add vibrant flavors to this savory dish such as garlic, jalapeño, dill and onion. Tofu absorbs flavors really well, so you don’t have to worry about having a bland dish.
I start by sautéing onion with olive oil until it becomes fragrant, then I add chopped bell pepper, olives and garlic and sauté for a few minutes.
Once your veggies are soft, crumble the tofu over the pan with your hands, sprinkle the turmeric, salt and pepper, and sauté until the tofu is cooked through.
While the tofu is cooking, chop up some jalapeño, cherry tomatoes and fresh dill. These will be the fresh components that will add vibrant flavor to the warm savory scramble.
Ingredients (serves two)
1/2 block tofu
1/2 yellow onion
1/2 red bell pepper/ capsicum
1/4 cup olives, chopped
2 cloves garlic
sprinkle of turmeric
salt and pepper to taste
fresh jalapeño slices
